1 Stick of Butter {Yeah Baby!}

2 Cups Sliced Leeks {or Sweet Onion}

8 Tablespoons Flour

4 Cups Hot Water

4 Cups Diced Potatoes

2 Cups Shrimp {or Prawn}

2 Cups Scallops {Sea or Bay}

2 Cups Firm White Fish {I prefer Pollock}

4 Cups Half & Half {do NOT substitute it ruins it!}

Salt, Celery Salt & Lowry's Seasoned Salt {to taste preference}

 

Simmer the leeks {onions} in butter, then remove from heat to add the flour ...

Add water and 1 teaspoon of salt, then bring to a vigorous boil ...

Add potatoes and cook slowly {stirring often} until the potatoes are cooked. A good chowder will have mooshy potatoes. Firm potatoes are not the correct procedure in this dish! ...

Add the seafood and cook for about 15 minutes ...

Add the half & half {DO NOT BOIL}

Add your seasonings ... VIOLA!

 

At this point you are free to experiment, I have had variations with many different kinds of seasoning added, and I have had rather good versions with sour cream thrown in {in moderation} ... Enjoy ... Jeremy
